Refrigeration. - Adequate refri- <br />geration boxes, cases, etc., provided with accurate <br />thermometers. Temperature to be maintained at 50oF• <br />or less. Waste water from refrigeration equipment <br />shall discharge into an open sink or drain, properly <br />trapped and sewer connected, in accordance with plumb- <br />ing code; Provided, that where sewer connections are <br />not available, clean adequate water -tight drip pans <br />may be used. <br />Item 14. Protection and Storage of <br />Food. - Except during preparation and serving, all <br />food and drink shall be effectively protected from <br />dust, flies, vermin, or other contamination by glass, <br />wood, or metal cases. <br />Item 15. Food Handlers' Certificates. - <br />No employer or proprietor of a public eating establish- <br />ment shall require, permit or suffer any person to work, <br />nor shall any person work in any building, room, or <br />basement used in connection with a public eating estab- <br />lishment unless such person has a food handler's cer- <br />tificate as provided for in Section 5 of this ordinance. <br />Item 16.
