metal installed back of beverage bar. Both compartments <br />shall have running hot and cold water and shall be prop- <br />erly connected with sewer as provided for in Plumbing <br />Ordinance. All serving glasses shall be sterilized each <br />time they are used, by immersion for one minute in a <br />chlorine solution containing not less than one hundred <br />(100) parts per million of chlorine. Such chlorine <br />solution shall at all times be maintained at the above <br />standard and shall be changed at least four (4) times <br />each day or more often if necessary, to maintain it <br />at the standard required, and free from visible contamination. <br />Item 18. Fountain Cleanliness. - All ice <br />cream containers and dispensers, syrup containers, and <br />other fountain equipment shall be maintained in a <br />sanitary condition. <br />Item 19. Insects. - All public eating <br />establishments shall be free from flies, roaches, and <br />other vermin and rodents. <br />Item 20. Kitchens. - .Kitchens in public <br />eating establishments to be provided with efficient <br />lighting facilities; walls and ceilings painted <br />with a light gloss paint, walls and floor around <br />cooking stoves provided with metal shield; metal <br />hoods over cooking stoves suspended at a convenient <br />height and properly connected with an exhaust fan or <br />ventilating flue sufficient to carry off all cooking <br />odors and vapors; stoves clean and in good condition. <br />Item 21.
