Construction and Cleanliness of <br />Utensils and Equipment. - All eating and cooking utensils <br />and all show and display cases or windows, counters, shelves, <br />tables, refrigerating equipment, and other equipment or UTENSILS & <br />EQUIPTENT <br />utensils used shall be so constructed as to be easily <br />cleaned and shall be kept clean and in good repair and <br />free from dust, dirt, insects and other contaminating <br />material. <br />Item 10. For <br />example, by immersion for at-least two minutes in clean, <br />hot water, the temperature of which is at least 1800 F.; <br />Provided that mechanical methods approved by the Director <br />of Public Health may be used for washing and sterilizing <br />dishes and utensils. <br />Item 11. Storage of Dishes and Utensils. <br />After bactericidal treatment all dishes and utensils <br />shall be stored in a clean place protected from flies, <br />dust or other contamination. <br />Item 12.
